2 tablespoons olive oil
1 1/2 pounds boneless beef sirloin or top round steak cut into 1/2 inch pieces
1 medium onion chopped
2 cloves of garlic
3 cups (your choice) salsa
1/2 cup water
1 tablespoon chili powder
1 teaspoon ground cumin
1 can (15 ounces) red kidney beans
1/4 cup chopped fresh cilantro leaves
Instructions
Heat 1 tablespoon oil in saucepot over medium to high heat. Add beef in 2 batches and cook until browned stiriing often. Remove beef.
Add remaining oil and heat over medium heat. Add onion and cook until tender. Add garlic and cook 30 seconds.
Add salsa,water,chili powder abd cumin. Heat to a boil.
Return beef to saucepat.
Add beans. Cover and cook over low heat 1 hour. Uncover and cook 30 minutes or until beef is fork-tender.
